Healthy No-Bake Cookies

I grew up making no bake cookies and I loved them! Now I make a healthier version and enjoy them for breakfast with a nut milk, or as a snack anytime. They are guilt-free and divine. The best part is, they are kid-approved. Here is my recipe for a standard batch:

1 1/2 cups coconut oil

1 cup cacao powder

1 cup honey or maple syrup

4 cups gluten-free rolled oats

2 scoops vegan protein powder (I like vanilla ones that are fairly mild in taste and texture)

4 Tbs flax seed meal

2 scoops green powder (optional)

1 Tbs maca powder (optional)

1 Tbs bee pollen (optional)

Instructions:

Melt coconut oil, cacao, and honey/maple syrup in a pot on low-med heat, just enough to melt the coconut oil but not boil the mixture.

In a separate bowl, combine oats, protein powder, flax meal, and any additional powders.

Add heated coconut/cacao/honey mixture to dry ingredients. Stir.

Line a cookie pan or cutting board with wax paper. Drop a spoonful of mixture into the wax paper. Freeze for 20-30 minutes. Put into bags or Tupperware and store in fridge for 2 weeks or freezer for up to 4 weeks.

Variations:

Try it with peanut butter, vanilla extract, a little salt, or anything else that seems healthy! You’ll be surprised by how much healthy you can hide in a little cacao and honey. I only add maca and bee pollen if I need the extra boost or am making it for my Hormone Happiness class. You can also replace the oats with coconut flakes for a delicious macaroon treat.  In which case, I don’t usually add the powders and it is still healthy:)

Enjoy!

Holistic Healing 101

Hmmm. This may be one of the most challenging questions I get asked in a day. I practice magic? Not good for a first impression. I hold space for healing to occur? That’s nice.

What I usually end up saying is that I help people heal through mind-body medicine. It makes me sound smarter (hopefully), and most people have an idea of a practice that falls into the category of “mind-body medicine”.  I hesitate to use the term “energy work” but that is also an accurate description. So let’s paint a clearer picture.

Can you agree that everything is made of atoms? Atoms resonate or vibrate at certain rates. Essentially, atoms are energy because the vibration is what makes them solid matter or finer matter. Thoughts are energy. Emotions are energy. They are actual vibrations that affect the physical world, even if not immediately or seemingly tangibly. Love is an energy, a feeling, and a vibration.

An energy healer understands that intention, faith, and a higher power are all real and important to real healing. They understand that if an area physically, emotionally, or spiritually is not operating properly, there is a way to raise the vibration and help the area re-align with that higher power. It can sound unreal to some and that’s OK. I’m not here to prove to everyone that what I do is real. But I do know for those who are open, mind-body medicine can do so much more for them than medical or psychological help alone because it takes both into account.

What I think is most powerful about the form of help I offer is that people can have real solutions to their physical issues when they understand the mind-body connection. They can change what they think about that changes their biological processes and often allow natural healing to occur. If I had one thing I teach, it would be that what you think about affects your emotions and your physical body. Not to scare anyone because their minds are often crazy messes, but to invite them to start bringing awareness to the mind. When we guide the mind with love and faith towards thoughts that feel better, the body heals.

I invite you to try mind-body medicine or energy medicine and see what it can offer you. Many times, my clients walk away with a greater understanding of what their bodies (and their spirits) are trying to communicate to them and they can make the proper adjustments in life to live more fully and freely. Contact me about phone sessions or my programs and see if what I do can help you personally. Really, you deserve it.

little poems

I used to write poems to express myself when I was young. They didn’t have to rhyme or make much sense, they just needed to sound “emotionally accurate”. They were short or long, intense or mild, dark or light. The “poems” helped me make something creative and beautiful out of a messy and often ugly inner experience. They helped me see that how I felt was OK, valid, and even special.

Back then, that may have been my only useful emotional outlet. I would express essentially the same nasty emotions in my journal and lock it tightly away, but part of me felt written in stone, like the negative views were now permanent. My journal was a toxic place, where all the stories of my victimization felt true and real and my hate was a leading writer. I’d been taught to keep a journal and record everything and I did just that; recorded my hurts, my hates, and my unseen hunger. I recorded the list of people I didn’t like, why I didn’t like them, and why I was right. I recorded my self-hatred and my low self-worth.

Flash forward to today, I am a happy and (mostly) balanced coach and healer. I have a knack with emotions and helping people find a new perspective. I acknowledge my emotions and their importance to me all throughout the day. I’m not perfect and I love it. It feels good to be honest about my ugly and see my light be stronger for it.

I still write my poems and I still have ugly emotional experiences that are tough to feel. I’m learning about how deeply I feel about nearly everything. And I listen. I listen to me and my experience. I listen to all the different voices, all their motivations, all their prejudices and hurts, all the goodness and darkness within. And I can feel the difference. I know the light from the dark, I know what is the real me and the false me. I know who it is I truly listen to; the part of me that is part of God, the inner Divine.

We all have that ability, to listen and discern what is us and what is less than us. What comes from a place of light and truth and what doesn’t. We can train our minds and re-wire our thinking by listening to our emotions. By being willing to validate it all and trust there is a inner guidance that knows the difference by how we feel. We can express how we feel, we can turn ugly into interesting, and we can re-write our lives.

I invite you to try a “little poem”. Write what is in your heart and forget about any mental concepts of what a poem should be. Just let your heart express through words, rhythm, rhyme, or story. Listen to your heart more than your head and know that you are enough too.

my little poem

the day stretches out like a desert                                                                                                fear leaks in from the sides                                                                                                                 what will happen if I stand still in today                                                                                             or sit with the creeping fear?

“am I enough?” my desperate heart demands,                                                                        finally heard in the stillness                                                                                                                  “do you love me?” it wants to know of my all too stern mind                                                                                                                                                                                                                           without hesitation, my mind replies                                                                                       “sweet heart, my dear, you are my life,                                                                                             you are who I am”
